First up is a simple Wild Onion Salt:
Harvest a good-sized bunch of wild onions
rinse and roughly chop
blend or process with enough salt to cover your chopped onion
dehydrate for 24-48 hours or place in oven at lowest setting for 1-2 hours until dry
Next we tried a Grape Hyacinth (Muscari) simple syrup:
Pop off the flower buds to harvest
Rinse and strain dry
Infuse (pour boiling water over flowers, enough to cover and steep for at least 1 hour)
Strain and measure liquid
Boil with an equal amount of sugar until dissolved
(I boiled my syrup with the flower buds because I have heard this reduces bitterness)
And last, but not least...Dandelion Flower Cookies.
